Quick and easy meal!
1 14 oz Can Crushed Tomatoes
1 14 oz Can Diced Tomatoes
3 tbsp Olive Oil
4 Cloves Garlic (Minced)
1 tsp Anchovy Paste
1 tsp Tomato Paste
1/4 Cup Kalamata Olives (Minced)
3 tbsp Capers
Fresh Parsley, Basil and Parmesan for Garnish
2 boxes GF Penne Pasta I use Barilla (The Best)
Heat oil in pan, add garlic, anchovy paste, tomato paste, warm until fragrant, add olives and capers. Stir and then add crushed and diced tomatoes. Simmer while pasta cooks.
Make pasta according to package. Once pasta is done drain, saving a 1/2 Cup of pasta water. Pour sauce over drained pasta. If too thick add some pasta water. Serve with a sprinkle of fresh parsley, basil and parmesan. Enjoy!
This recipe can be halved.
