1 LB Raw Brussel Sprouts (Stems Removed and Thinly Sliced)
1 Pink Lady Apple (Diced)
1-2 Scallion (Thinly Sliced)
1/4 Cup Dried Cranberries or Cherries
1/4 Cup chopped Walnuts
Dressing:
1/4 Cup Olive Oil
Juice of Half a Lemon
1 tbsp Apple Cider Vinegar
1 tbsp Honey
1/2 tsp Dijon Mustard
1/2 tsp Dried Parsley
3/4 tsp Salt
Pepper to taste
For the dressing place all ingredients in a shaker bottle and shake. Season to taste. Depending on the size of lemon adjust to your liking.
Add thin sliced Brussel Sprouts to a bowl add Walnuts, Apple, Cranberries or Cherries and Sliced Scallion. Top with dressing and toss. Enjoy!
This is great on it’s own or pairs perfectly with pork.
