My Family and I love this take on the Caesar Salad made with Kale instead of Romaine!
6 oz Kale chopped and de-stemmed
Topping:
1/4 Cup Chopped Walnuts
1/4 Cup Shredded Parmesan Cheese or Italian Blend
1/8 Cup Grated Parmesan
1 tsp Dried Parsley
Dressing:
1/3 Cup Mayonnaise
1/2 tsp Anchovy Paste
1 Clove garlic (Made into a paste)*
1 tsp Dijon Mustard
1/2 Lemon
1/4 Cup Grated Parmesan Cheese
Salt and Lemon Pepper to taste
Place chopped Kale in bowl of lukewarm water and soak for 10 minutes. This not only cleans the Kale but softens it a bit. When finished soaking, remove from water and place in salad spinner and spin away! If you don’t have a salad spinner just wring out and dry completely. Place in fridge to chill while you make the dressing.
For the dressing mix all dressing ingredients in the bowl you are using for salad and whisk together. Once Kale is chilled add to dressing and toss. Top with topping and Enjoy!
This can be made 30 min in advance It won’t get soggy!
*To make a garlic paste, just peel and chop the garlic, add salt and mash with back of knife!
