Moist and Delicious
1 LB Ground Beef
1 LB Ground Pork
1 Cup Fresh Spinach
1 Small Onion
4 Cloves of Garlic
2/3 Cup Almond Flour
2 Eggs
2 tsp Salt
1 tsp Dried Parsley
1/2 tsp Pepper
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Italian Seasoning
Topping:
1/4 Cup BBQ or Tomato Sauce (Optional)
Add Spinach, Garlic and Onion to a food processer and process until a pesto-like consistency. (See pic in steps) To a bowl add eggs and beat, add Spinach mixture, Almond Flour and Seasonings and mix. Next add the Ground Beef and Pork and mix. (I mix with fork to make sure evenly distributed and blended well) Get in there with your hands and gently fold to blend more. Try not to over work the meat or the finished product may be tough. Place in a loaf pan and cover with sauce if using.

Bake uncovered in a 375° oven for 1hr 10 minutes, or until temperature reaches 165. Enjoy!
