Quick and Easy Lunch or side
9 oz pkg 3 Cheese Tortellini
1/4 Cup Kalamata Olives (Chopped)
1 Scallion (Sliced)
1/2 Cup Cherry Tomatoes (Sliced into Quarters)
1/2 Cup Cucumber (Diced)
3 Slices Genoa Salami (Diced)
2 tbsp Fresh Parsley or Basil for Garnish
Directions:
Cook Tortellini according to instructions, while cooking chop, dice and slice all ingredients. Place in Bowl add cooled Tortellini and mx with Italian Dressing. Top with Fresh herbs and Enjoy!
Italian Dressing: Better than store bought!
3/4 Cup Olive Oil
1/4 Cup Red Wine Vinegar
2 tbsp Water
1 tsp Honey
1 tsp Dijon Mustard
2 Cloves Garlic (Made into a paste)
1 1/4 tsp Salt
1/8 tsp Pepper
1 tbsp Grated Parmesan Cheese
1/2 tsp Oregano
1/2 tsp Dried Parsley
1/2 tsp Dried Minced Onion
Add all ingredients to a shaker bottle and Shake! Store in Refrigerator for up to 5 days. Enjoy!
